Thickened Watermelon Sorbet

watermelon-1543257_1920The most refreshing taste of summer made from the most abundant fruits of summer is ready in a flash and thickened with instant thickener.

This is so easy that it will be a favorite! Chop, freeze and buzz!

Prep Time: 10 minutes–plus overnight freezing         Level: Easy          Yield: 4, 1 cup servings


  • ½ of a seedless watermelon, cut into cubes
  • Juice of a lime
  • 2 scoops of instant thickener, xanthum gum variety


Cut the seedless watermelon into one inch cubes, place in a zip bag and freeze overnight.

Place the frozen cubes of watermelon in the pitcher of a high speed blender.

Pulse the blender until the watermelon breaks down into little pea-sized chunks.

Sprinkle the instant thickener over the fruit and allow to sit for a minute.

Sprinkle in the juice of the lime.

Buzz on medium high speed until the sorbet forms.

Serve in one cup or half cup servings.

Freeze remaining portions in glass storage bowls. To serve remaining portions, allow to soften in the fridge for an hour until safe for the swallow.
